What happened to pen & paper?

We went out to Parkhurst on the weekend for breakfast to a new place on 4th called Vovo Telo.
This is a franchise owned by famous brands, which also owns Tasha’s, so we thought it would be of the same quality and service……firstly you have to queue (not a surprise living in joburg but part of a normal dining experience).
We finally managed to get a table & waited for our waitress to take the order. I am rather particular with my food, not fussy I just know what I want. After ordering Earl Grey tea, HARD poached eggs on ciabatta (with no butter) and fresh tomato, we first received the wrong order, then finally received very cold soft eggs (which I hate), a plate of butter with a dash of ciabatta, cooked tomatoes and ceylon tea (I will give them credit the tea was hot). When we placed our order I told my partner that the waitress would not remember the order, I pose one question: why is it so uncool for waiting staff to use a pen & paper? I mean I wouldn’t remember complicated orders, I am an accountant, no one minds me using a calculator.
Overall poor service, below average food with a great bakery. My suggestion would be to not try serve so many tables and rather focus on getting the orders right and keeping the food hot.
